Red Wine Pickled Beets Recipe

I'd been significance to can for some time. My delay wasn't that I was threatened by the procedure as much as endeavoring to oversee it alongside recording a video and taking photographs. Indeed, even the easiest formula ends up noticeably complex once you add on the "nourishment blogging" factor.

At the point when my companions at Whole Foods Market requested a formula, this was the ideal time to begin! I adjusted a formula I got from my companion Michael and the book he loaned me, the Preservation Kitchen. Clever thing, I met Michael over Instagram in light of, well, sustenance photographs. Go figure.

I need to make one critical note here. I fudged on topping these containers sufficiently off so don't do as I do in this situation. Ensure you see the note underneath on legitimate head space.

3 Pounds Golden Beets

2 Cups Red Wine Vinegar (no less than 5% sharpness)

1 Cup Red Wines

1/2 Cup Water

1/3 Cup Honey

1/3 Cup Brown Sugar (pressed)

1 Tablespoon Sea Salt

2 Teaspoons Black Peppercorns

8 Sprigs Thyme

4 Sprigs Rosemary

1. Canning has a great deal of moving parts. Be that as it may, something that can truly take the weight off is the request in which you get things done. It spares a considerable measure of time. To begin, we should get your pot, fitted with a canning rack, loaded with water. At that point convey it to a low stew.

2. While the water warming up, we are going to get our beet on. Cook the 3 pounds of brilliant beets (with some olive oil and ocean salt) secured, heat at 400 degrees for a hour until delicate. Expel them from the stove and once they are cool, rub off the skins. At that point cut the beets into 1/4-inch wedges and weigh out 2 1/2 pounds to pickle; eat the rest. #nomnom

3. As the beets are broiling, set up the saline solution. In a little sauce pot include the accompanying: 2 containers red wine vinegar (5% acridity), 1 glass red wine, 1/2 container water, 1/3 container nectar (sorry vegetarians!), 1/3 container pressed darker sugar, and 1 tablespoon ocean salt. Heat it to the point of boiling and after that keep it warm.

4. The water ought to be prepared to set up the containers. Set 4 half quart jolts on the canning rack. Leave the containers there until the point that you are prepared to fill them yet don't give the water a chance to get over a low stew. Keeping the containers warm keeps them from breaking when you fill them with hot liquids. For what reason does that sound grimy?

5. Take a little bowl and fill it with a portion of the high temp water from the pot with the jugs. Give it a chance to cool a tad and after that include the container tops. This will diminish up the elastic on the tops and better the seal. Additionally, you shouldn't reuse covers as this can prompt unreliable seals.

6. While the tops warm, expel the jugs from the pot. Before pressing them with beets and the saline solution, add the accompanying to each jug: 1/2 teaspoon dark peppercorns, 2 thyme sprigs, and 1 rosemary sprig.

7. Presently pack the jugs with the beets and load with brackish water, leaving 1/2 inch of room from the edge. As you will see in the last photographs, I didn't get this thoroughly right. On the off chance that there is excessively air space between the sustenance and the cover, a staining in the highest point of the item may come about. #doasIsay

8. Seal the jugs with a warmed cover. When screwing on the canning ring, you need it to be cozy yet not over fixed. Try not to go all Hulk on it.

9. Presently how about we process the jugs. Add them back to the pot, putting them on the canning rack. Include enough water so the containers are secured by no less than 1/2 of water. Heat it to the point of boiling and afterward begin the clock. Give them a chance to process for 10 minutes. After the 10 minutes, kill the warmth and let them cool for a couple of minutes in the shower before evacuating.

10. Evacuate them utilizing a jug lifter, being mindful so as not to tip the containers, and to then simply set them out on a counter to completely cool. You know they are fixed when the best pops and you can never again push down the space. Be that as it may, you can evacuate the jug ring and check the seal yourself, you ought to have the capacity to hold the container by the cover.

NOTE: For longer stockpiling, store them without the rings... this anticipates rust.

Oatmeal and Mini Chip Crisps: The Easiest Cookies Ever

For a considerable length of time, I put away my stand electric blender in the back of a kitchen organizer. To recover the blender, I needed to bow on the floor, venture into a dim corner, and drag the blender forward without hitting or harming anything. Recovering the blender was difficult for my back, and made me hesitant to utilize it. So I removed the blender from the pantry and set it on the counter.

I had a white blender cover available, and put it on the blender to keep the dishes clean. Presently I don't utilize a cover. The blender is by the stove, helpful and prepared for work. For little occupations, I utilize a hand-held blender. It's in the first box at the front of a cabinet, once more, where I can see it.

In many societies, occasion time is heating time. Home cooks get together and heat espresso cakes, nutty cakes, breads, buns, and treats. Minnesotans like me prepare an assortment of treats and have treat trades. Every visitor conveys a few dozen treats to swap. After espresso and discussion, everybody has a platter of treats to bring home.

I want to prepare and have made many treat formulas. Be that as it may, this formula is one of the most straightforward. You simply require a bowl, wooden spoon, measuring container, and measuring spoons. No blender. The mixture meets up in minutes and is chilled for no less than a hour prior to preparing. Since everybody in my family cherishes chocolate chips, that is the thing that I utilize. Destroyed coconut or dried cranberries might be substituted for chocolate chips.

These treats solidify well (we adore them so much we eat them ideal from the cooler), however they don't deliver well. The thin crisps are excessively delicate, making it impossible to send to an understudy or companion. In addition, relatives will likely eat up the treats and there won't be any cleared out. Children will appreciate making these treats. Obviously, the best piece of heating is tasting treats - crisp, fragrant, and warm from the broiler.

Fixings

3/4 glass pre-filtered, standard flour

1/2 teaspoon heating pop

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1 glass light darker sugar, stuffed

1/2 containers brisk cooking oats (not steel-cut or moment)

1 container smaller than expected chocolate chips

1/2 teaspoons unadulterated vanilla concentrate

1/2 container canola oil

1/4 container water

Strategy

1. Coat preparing sheet with cooking shower. Remove a long piece of wax paper and lay it on the counter.

2. Utilizing a wooden spoon, blend flour, preparing pop, salt, cinnamon, and nutmeg together in a bowl.

3. Include remaining fixings and consolidate well. Chill 60 minutes.

4. Warmth stove to 350 degrees.

5. Drop teaspoon-estimate mixture onto arranged preparing sheet, leaving two creeps between treats.

6. Set dish on center broiler rack and prepare 10-12 minutes.

7. Give treats a chance to rest 30 seconds before expelling from container. Cool on wax paper.

8. Store treats in a sealed shut holder. This formula makes around 45 treats.

Those Fabulous, Decadent French Pastries

In the seventeenth century, the last course of a feast, which typically included natural products, cheddar and nuts, was standard at the finest supper tables of France. Continually searching for new and heavenly dishes, the government extended those decisions to incorporate cakes, as dairy, eggs and margarine turned out to be more accessible and more well known. The best gourmet specialists utilized their culinary abilities to make rich desserts, and bread pastry shops all through Paris stuck to this same pattern. Pastisseries soon showed up on the city roads, including mouth-watering baked goods unmistakably showed in their front windows.

"Dessert" is gotten from desservir which signifies "gather the dishes" in French, and the custom of serving something sweet after the principle dinner ended up plainly prominent with the privileged societies. It didn't take ache for the general masses to try different things with custardy rich dishes, and the pastry course as we probably am aware it was conceived. Albeit basic cakes and pies had been around for a considerable length of time, they were normally served for uncommon events and occasions, however the last sweet course turned into a hit for French gastronomes.

Illustrious and well off family units employed cake culinary specialists, called pâtissies, whose mastery was progressively popular as the French built up their desire for these cakes, and bistros flew up around Paris to take care of the demand, where one could appreciate a napoleon and some espresso, or bring home a couple of top picks.

Marie Antoinette, the last ruler preceding the French Revolution, is frequently credited with requesting up a portion of the primary cakes, which may have included petit fours and macaroons. Having a refined and requesting sweet tooth, she inspired her supper visitors with these new manifestations and crunched on them secretly in her boudoir. At the point when there was a bread lack in Paris, she purportedly conveyed her celebrated line, "Let them eat cake." (Queen Marie was not known for her sympathy and liberality towards the normal people.)

A standout amongst the most well known French cookbooks, distributed in 1651 entitled Le Cuisinier François, included formulas from a "big name gourmet expert" named François Pierre, Sieur de la Varenne. He was the Julia Child of his chance, and were he alive today he doubtlessly would have his own particular show on the Food Network, alongside an entire line of fashioner cake apparatuses and heating container. Francois shared formulas for a considerable lot of the well known French baked goods, with the goal that the normal people could treat themselves, if they approached the rich and expensive fixings he utilized for his affluent customers.

In view of the wealth of natural product in America, numerous pioneer desserts were set up with apples, peaches, plums and berries. Yet, with the convergence of migrants, every ethnic gathering brought its own formulas and opened pastry kitchens and eateries, presenting their indigenous nourishments. In the eighteenth century, a huge number of French locals started to touch base on the shores of the New World, carrying their culinary aptitudes with them and growing America's collection of sweets and sugary joys, also waistlines. Obviously, Thomas Jefferson, constantly one stage in front of the group, presented new culinary finds from his excursions to Paris and brought back champagne and cake batter formulas for his incredible suppers at the White House.

What separates French cakes from other nation's desserts and cakes are a few unmistakable contrasts:

Many French cakes are flaky from the liberal utilization of margarine;

Arrangement of French cakes is monotonous and tedious, requiring exact measuring and heating;

Layers of rich batter set aside opportunity to take off and request exactness by committed gourmet specialists;

Meringues, custards and mousses are work concentrated; one oversight and you have a coagulated wreckage;

Introduction is significant, as French baked goods are rich and require imaginative fixation;

Eclairs, madeleines, cream puffs, and napoleons head the rundown of top picks; and for the record, there is no proof that napoleons were named for the French Emperor and military pioneer who shares the name, and it is exceptionally far fetched he nibbled on them amid fights.

Prestigious French cook Julia Child influenced it to look simple. What's more, she accomplished more than her part to acquaint Americans with the pleasures of French cooking. Be that as it may, on account of strength pastry shops and store coolers, we can take the path of least resistance. Pardon us, Julia, yet let us eat cake instant.

Dale Phillip, foodie and creator, gets frail simply considering treats and French baked goods. Her top choices incorporate madeleines, organic product tarts and brioche. She grew up with a mother who made soften in-your-mouth eclairs and saw firsthand the aptitude required. In her local Chicago, French eateries and pastry shops thrived however are tragically ailing in Southern California, where she now lives.

Southern Desserts - Y'all Gotta Try 'Em

Southerners take pride in their treats, no inquiry, and you can wager each cook has his or her own particular exceptional formulas. Regardless of where we live, we as a whole know our shoemakers (peach, apple or berry), and we've known about red velvet cake for quite a long time, however If you've never invested energy in the southern states, at that point a portion of the names will sound peculiar, yet enchanting. A valid example: chess pie, sugar pie (as though pies aren't sufficiently sugary), hummingbird cake (say, what?) and the ever-mainstream Key lime pie. Pecans develop abundantly in southern soil, so it shocks no one that rich pecan pie and pralines are very nearly a religion.

In most accommodation stores, you can't miss the show of Moon Pies (not by any stretch of the imagination pies yet more like sandwich treats) sitting on the counter, simply asking to be grabbed up. They're a southern custom, sort of like their rendition of s'mores, made with graham saltines and marshmallow filling, at that point dunked in chocolate or butterscotch covering. Try not to endeavor to make them yourself. Select rather for a chocolate or lemon chess pie, which is simple, served in a solitary covering and contains a thick, sugary filling. Another easy decision, natural product shoemakers can be single or twofold hull, heated in a goulash dish and can have a brittle garnish sprinkled over the organic product filling, instead of a pie covering topping. Southerners get a kick out of the chance to utilize buttermilk bread rolls to finish everything. Sugar pie, initially from southern Indiana, is essentially a custard base with heaps of darker sugar or molasses, single covering. (Diabetics be careful.)

Pies came to America with the main English pilgrims. Early pioneers heated their pies in long limited skillet called "caskets" which likewise alluded to a hull. (Not extremely tempting without a doubt.) Centuries sooner, most pies were loaded with meat and eaten as a principle course, and early treats were kept basic, including products of the soil. Be that as it may, American homesteaders utilized organic products from their plantations, supplanting hundreds of years of meat fillings, and it was amid the American Revolution that "outside layer" supplanted the less engaging term coffyn (unique spelling). Most likely a smart thought, as our foodie President Thomas Jefferson would have disapproved of serving pastries with coffyns at the White House. (His visitors said thanks to him.)

In the summers when natural product was abundant, early cooks arranged an outside layer, filled it with apples or peaches, and called it shoemaker (now and then alluded to as a "fresh" or apple dark colored betty, both close cousins). The birthplace of red velvet cake plays a pull of war between New York and the South, making its presentation in the mid-twentieth century, and every area has its own marginally unique adaptation. The red shading came initially from beets, however now utilizes red sustenance shading, unless you extremely like beets. Banana pudding is dependably a hit, made with vanilla wafers, cut bananas, vanilla pudding and whipped cream.

Affirm, so what precisely is hummingbird cake? Fundamentally a flavor cake made with pounded banana, pineapple, pecans, cinnamon, and vanilla concentrate. It's additionally a mainstream pie, which incorporates comparable fixings however filled a pie covering. Old-clocks swear you'll sing like a feathered creature when you take your first nibble. (For what reason not songbird pie? They sing more.) Or perhaps it should get your taste buds murmuring, You choose.

Whatever you long for, the decision is unending in all aspects of the nation. The Midwest prefers its crusty fruit-filled treat and cheesecake, the East supports Boston cream pie and highly contrasting treats, in the West, make it Meyer lemon cake and anything with marionberries. At that point there's dependably an entire other class of ethnic strengths which possess large amounts of each state. Also, that is only first of all. So snatch a fork and dive in, y'all.

Dale Phillip is the writer of various articles on the historical backdrop of Food and Drink. What's more, she isn't only a self-announced foodie, yet a sweet foodie, a class without anyone else. When she lived in the South for a long time, she found a large number of those exemplary dishes she expounds on. She admits that she's never eaten hummingbird cake, however she does a touch of singing every so often in her California living arrangement.

Certain nuts may help ward off return of colon cancer

WASHINGTON: Eating certain kinds of tree nuts, such as almonds, pecans, walnuts, hazelnuts and cashews, has been linked to a dramatically lower risk of colon cancer recurrence, researchers said Wednesday.

The observational study involved 826 patients who had undergone treatment for stage III colon cancer, typically including surgery and chemotherapy.
Such patients -- whose cancer has not spread elsewhere in the body -- have a 70 percent chance of surviving three years after treatment.
Some 19 percent of patients consumed two or more ounces of all types of nuts per week.
These nut-eaters saw a 42 percent lower chance of cancer recurrence -- and a 57 percent lower chance of death than patients who did not eat nuts after completion of their cancer treatment, said the report, released ahead of the American Society for Clinical Oncology (ASCO) annual meeting, held in Chicago next month.
When researchers looked only at tree nut consumption, the chance of recurrence was 46 percent lower and the chance of death was 53 percent lower for those who ate at least two ounces per week, compared to people who did not eat nuts.
Peanuts and peanut butter -- the most commonly consumed nuts in the United States -- did not appear to have any significant effect.
"Numerous studies in the fields of heart disease and diabetes have shown the benefits of nut consumption, and we felt that it was important to determine if these benefits could also apply to colorectal cancer patients," said lead study author Temidayo Fadelu, a clinical fellow in medicine at Dana Farber Cancer Institute.
"Patients with advanced disease who benefit from chemotherapy frequently ask what else they can do to reduce their chances of recurrence or death, and our study is an important contribution to the idea that modifying diet and physical activity can be beneficial."
Eating nuts should not be considered a substitute for standard chemotherapy and other treatments for colon cancer, experts said.

"Rather, patients with colon cancer should be optimistic, and they should eat a healthy diet, including tree nuts, which may not only keep them healthier, but may also further decrease the chances of the cancer coming back," said ASCO president Daniel Hayes.
Researchers cautioned that the study was observational nature and did not prove cause and effect.
A separate study discussed Wednesday ahead of the Chicago cancer conference involved 992 people whose colon cancer had not spread. It showed that following a Mediterranean diet and exercising reduced their risk of dying prematurely by 42 percent and also cut their chances of seeing their colon cancer return.

15 Weight Loss Tips That Are Actually Evidence-Based

The weight loss “industry” is full of myths.
People are being advised to do all sorts of crazy things, most of which have no evidence behind them.
Over the years, however, scientists have found a number of strategies that seem to be effective.
Here are 26 weight loss tips that are actually evidence-based.

1. Drink Water, Especially Before Meals

It is often claimed that drinking water can help with weight loss, and this is true.
Drinking water can boost metabolism by 24-30% over a period of 1-1.5 hours, helping you burn off a few more calories (1, 2).
One study showed that drinking a half liter (17 oz) of water about a half an hour before meals helped dieters eat fewer calories and lose 44% more weight (3).

2. Eat Eggs For Breakfast

Eating whole eggs can have all sorts of benefits, including helping you lose weight.
Studies show that replacing a grain-based breakfast with eggs can help you eat fewer calories for the next 36 hours, and lose more weight and more body fat (4, 5).
If you can’t eat eggs for some reason, then that’s fine. Any source of quality protein for breakfast should do the trick.

3. Drink Coffee (Preferably Black)

Coffee has been unfairly demonized. Quality coffee is loaded with antioxidants, and can have numerous health benefits.
Studies show that the caffeine in coffee can boost metabolism by 3-11%, and increase fat burning by up to 10-29% (6, 7, 8).
Just make sure NOT to add a bunch of sugar or other high-calorie ingredients to it. That will completely negate any benefit you get from the coffee.

4. Drink Green Tea

Green tea contains small amounts of caffeine, but it is also loaded with powerful antioxidants called catechins, which are also believed to work synergistically with the caffeine to enhance fat burning (9, 10).
Although the evidence is mixed, there are many studies showing that green tea (either as a beverage or a green tea extract supplement) can help you lose weight (11, 12).

Coconut oil is very healthy. It is high in special fats called medium chain triglycerides, which are metabolized differently than other fats.
These fats have been shown to boost metabolism by 120 calories per day, and also reduce your appetite so that you eat up to 256 fewer calories per day (13, 14).
Keep in mind that this is not about adding coconut oil on top of what you’re already eating, it is about replacing some of your current cooking fats with coconut oil.

6. Take a Glucomannan Supplement

A fiber called glucomannan has been shown to cause weight loss in several studies.
This is a type of fiber that absorbs water and “sits” in your gut for a while, making you feel more full and helping you eat fewer calories (15).
Studies have shown that people who supplement with glucomannan lose a bit more weight than those who don’t (16).

7. Cut Back on Added Sugar

Added sugar is the single worst ingredient in the modern diet, and most people are eating way too much of it.
Studies show that sugar (and high fructose corn syrup) consumption is strongly associated with the risk of obesity, as well as diseases like type 2 diabetes, heart disease and others (17, 18, 19).
If you want to lose weight, you should be cutting back on added sugars. Just make sure to read labels, because even so-called health foods can be loaded with sugar.

8. Eat Less Refined Carbs

Refined carbohydrates are usually sugar, or grains that have been stripped of their fibrous, nutritious parts (includes white bread and pasta).
Studies show that refined carbs can spike blood sugar rapidly, leading to hunger, cravings and increased food intake a few hours later. Eating refined carbs is strongly linked to obesity (20, 21, 22).
If you’re going to eat carbs, make sure to eat them with their natural fiber.

9. Go on a Low Carb Diet

If you want to get all the benefits of carb restriction, then consider taking this all the way and going on a low carb diet.
Numerous studies show that such a diet (or “way of eating”) can help you lose 2-3 times as much weight as a standard low-fat diet, while improving your health at the same time (23, 24, 25).

10. Use Smaller Plates

Using smaller plates has been shown to help people automatically eat fewer calories in some studies. Weird trick, but it seems to work (26).

11. Exercise Portion Control or Count Calories

Portion control (eating less) or counting calories can be very useful, for obvious reasons (27).
There are also studies showing that keeping a food diary and writing down what you eat, or taking pictures of all your meals, can help you lose weight (28, 29).
Anything that increases your awareness of what you are eating is likely to be useful.

12. Keep Healthy Food Around in Case You Get Hungry

Keeping healthy food close by can help prevent you from eating something unhealthy if you become excessively hungry.
A few snacks that are easily portable and simple to prepare include whole fruits, a handful of nuts, baby carrots, yogurt and a hardboiled egg (or two).

13. Brush Your Teeth After Dinner

Although I’m not aware of any studies on this, many people recommend brushing your teeth and/or flossing right after dinner. Then you won’t be as tempted to have a late-night snack.

14. Eat Spicy Foods

Spicy foods like Cayenne pepper contain Capsaicin, a compound that can boost metabolism and reduce your appetite slightly (30, 31).

15. Do Aerobic Exercise

Doing aerobic exercise (cardio) is an excellent way to burn calories and improve your physical and mental health.
It appears to be particularly effective to lose belly fat, the unhealthy fat that tends to build up around your organs and cause metabolic disease (32, 33).

Get a Seafood Fix on National Bouillabaisse Day

Bouillabaisse is a seafood stew that hails from Marseille in France's southern Provence region. Bordered by the Mediterranean Sea, this region has abundant seafood. The dish was originally a stew prepared by fishermen using seafood that they could not sell at market. A variety of seafood can be used, but it is typically made with a combination of shellfish and fish.
The fragrant broth, which includes onions, leeks, fennel, garlic, saffron and cayenne, is the true hallmark of the dish, and a crusty baguette makes the perfect accompaniment for soaking it up. Traditionally, the bread is topped with a homemade mayonnaise spread.
This simple version of bouillabaisse is slightly less labor intensive than more traditional recipes but, with an abundance of flavor, it will help you celebrate National Bouillabaisse Day the right way!
Ingredients
  • 3 tablespoons olive oil
  • ½ cup diced onion
  • 1 cup diced fennel bulb
  • 1½ cups thinly sliced leeks, whites only
  • ¼ teaspoon salt
  • 3 diced cloves garlic
  • 1 cup diced beefsteak tomatoes
  • 2 bay leaves
  • Pinch of saffron
  • ¼ teaspoon cayenne
  • 4 cups seafood or fish stock
  • 1 16-ounce lobster tail (optional)
  • 2 cups fingerling potatoes, halved or quartered into similar sizes
  • 2 dozen littleneck clams
  • 2 pounds sturdy white fish (such as rockfish, monkfish, halibut, or cod), cut into 2-inch pieces
  • 2 dozen mussels
  • 8 ounces scallops
Instructions
  1. In a large pot, heat olive oil over medium heat. Add onion, fennel and leeks. Season with salt. Cook until translucent. Add tomato and garlic and cook until tomatoes become soft. Add bay leaves, cayenne and saffron and cook for 2 minutes. Add fish stock. Cover and let simmer on low heat for 20 to 25 minutes. Remove bay leaves.
  2. Add broth and vegetables to a blender or food processor. Puree into a loose, chunky sauce. Strain the liquid through a fine mesh strainer. Place strained broth back into large pot. Discard the vegetables.
  3. In a separate pot, boil lobster until shell is bright red, about 5 minutes. Remove and set aside. Add fingerling potatoes to boiling water and cook until soft, then remove. Once lobster has cooled, remove lobster meat from tail and claws.
  4. In large pot, heat broth to a simmer. Add clams and cook for 2 minutes, covered. Add fish pieces and mussels. Recover pot and cook for an additional 6 minutes. Add lobster and potatoes, recover, and cook for 2 more minutes to heat through.
  5. Portion the bouillabaisse into 6 dishes. Serve with toasted baguette.

Pumpkin Spice Dark Hot Chocolate

Are you the person who waits for autumn with baited breath in front of your local Starbucks? Does ‘PSL’ mean anything to you? Yes, I’m talking about pumpkin spice lattes and, come late winter, I look for any excuse to work them back into my menu at home. A recent Recipe Redux was my excuse. The challenge ingredient was chocolate. That’s right. The dietitians are working with chocolate and we LIKE it. So with chocolate in hand, I plotted to combine it with a healthier, pumpkin spice latte-like beverage.
Components of a healthier Pumpkin Spice Beverage:
  • Using unsweetened almond milk as a base, we’re starting off at 30-40 calories per cup.
  • Now for what you’ve actually been waiting for ... the benefits of chocolate. Dark chocolate contains antioxidants and has been shown in studies to lower blood pressure. I’m not saying go crazy here, but it does have some health benefits.
  • By using spices and alternative flavors like pumpkin, cinnamon sticks and nutmeg, you won’t be missing the major sugar jolt that is normally used for flavorings.

Pumpkin Spice Dark Hot Chocolate

Carlene Thomas, RD, LD
Makes 4 one cup servings
Ingredients
4 cups unsweetened vanilla almond milk
6 oz dark chocolate chunks
3 TBSP canned pumpkin puree
1 tsp pumpkin pie spice
cinnamon sticks & fresh nutmeg
Optional: sugar per taste preference, whipped topping, coffee
Instructions
  1. In a large pot, heat milk until steaming (not boiling ... no bueno). Add chunks or chips of dark chocolate to the same pot, stirring constantly.
  2. Add pumpkin puree and pumpkin pie spice to the milk mixture and stir to combine.
  3. Pour into four glasses and serve. If you need to be caffeinated, add coffee or instant powdered coffee.

Want to Eat Better or Lose Weight? Write on!

Keeping a food record, independent of other factors, can lead to better weight loss across a wide range of people. Click on the link and check out figure No. 4 a little more than halfway down the page — the more food records kept, the more weight lost.
Why does food journaling work? Because it gives you a moment to pause and consider what you’ll be eating … and why you’re eating it. Journaling also provides you with a concrete record to review and learn from. Patterns and trends that you never considered become crystal clear when you look at them on paper:
  • Seven hours between meals leads to an afternoon crash and overeating at dinner.
  • Every time you go out with friends you end up eating and drinking a little more than you wanted to.
  • It’s too hard to say no to the brownies in the house after dinner.
  • A stressful day always leads to a comfort food.
And so on.
The main objection I (and probably many other dietitians) get from people in response to keeping a food record is that they “don’t have the time” to keep a detailed record and “don’t want to measure” everything they eat. My response? Don’t worry, do your best.
Of course, the more detail I can get the better, but keeping a food journal, especially in the beginning of my relationship with a client, is not to analyze their exact daily caloric intake. Instead, it’s to give me an idea of the types of foods they eat, when they eat, where they eat and of course, why they eat. It gives me a lens into their life, via their food. Because in the end, changing a person’s eating habits impacts a lot more than just what they eat.
More importantly, though, this exercise provides my client with an opportunity to become aware of, and reflect upon, their own eating habits. By the time I see them for their first session, they’ve usually already got their own ideas on how to make changes. I’m there to be a sounding board, correct any misconceptions and help make the proposed eating improvements the “path of least resistance.”
Can you devote three to five minutes a day to your health? And you don’t have to touch a measuring spoon (unless you want to). Just focus on three things:
  1. What you ate
  2. When you ate
  3. Why you ate (Were you really hungry? Or just bored? Or stressed?)
Extra credit responses include where you ate and rough estimates of how much you ate — just use your hand (a fistful, a palmful, a fingertip, etc.). Then, at the end of the week, spend a few minutes reviewing the record and seeing where you could, and are willing, to improve.

Spelt Flour Pancakes with Blueberry-Ginger Compote

Spelt flour has a naturally sweet and nutty flavor that works well in quick breads and hot cakes. Topped with a simple blueberry-ginger compote, these pancakes are the perfect addition to your next weekend brunch.

Ingredients
Pancakes
  • 1 cup spelt flour
  • 1 tablespoon granulated sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon cinnamon
  • ⅛ teaspoon salt
  • 1 egg
  • ½ cup plain low-fat yogurt
  • ½ cup low-fat milk (or unsweetened non-dairy milk)
  • 1 teaspoon vanilla extract
  • Cooking spray
Blueberry-Ginger Compote
  • 2½ cups frozen or fresh blueberries
  • 2 tablespoons maple syrup
  • ½ teaspoon fresh ginger root, peeled and grated
Directions
  1. In a large mixing bowl, sift together spelt flour, sugar, baking powder, baking soda, cinnamon and salt to remove any clumps.
  2. In a medium bowl, beat the egg with a fork. Add yogurt, milk and vanilla extract, and stir until combined. Add wet ingredients to dry ingredients, and stir gently until the mixture is just moistened and small lumps remain.
  3. Heat a nonstick skillet over medium-high heat and spray with cooking oil. Scoop ¼ cup of batter and pour into the pan, spreading gently to form an even circle. Cook 1 to 2 minutes or until bubbles form in the middle of the pancake and the bottom is lightly browned. Gently flip and cook 1 minute until the other side is lightly browned. Repeat until all batter is used, adding oil to the pan between pancakes as needed.
  4. To make the blueberry-ginger compote, add blueberries, maple syrup and grated ginger to a small saucepan. Bring to a simmer over medium-high heat and stir. Break blueberries apart with the back of a spoon as you cook.
  5. Simmer for 8 to 10 minutes or until sauce begins to thicken. Serve warm over pancakes. Serves 4.

Mascha A. Davis: Making a Global Impact through Nutrition

At the age of 7, Mascha Davis and her family became political refugees, fleeing the former Soviet Union and settling in the United States. Shaped by this experience and having traveled while growing up, Davis was drawn to helping people in impoverished areas. She earned a master’s degree in public health and became a registered dietitian, working in a clinical setting until 2010.
That is when Davis pursued a long-held dream of working abroad — first in Switzerland, then in Africa, where she worked in international development and humanitarian aid. For five years, Davis worked with nonprofit organizations in South Sudan, Chad, Darfur, Ethiopia and Gabon.
Spending most of 2015 in South Sudan, her tasks ranged from coordinating delivery of aid supplies, managing and training staff, and performing nutritional assessments. “We were running nutrition centers that treated about 2,000 malnourished children each week,” Davis says. “It was difficult and frustrating at times, but it was one of the most impactful experiences I have ever had.”
While living in a remote area of Chad, Davis and her staff implemented long-term development projects in local villages. In Darfur, she focused primarily on developing nutrition projects for the prevention of malnutrition.
“Living and working in some of the least developed countries in the world has been very humbling and has opened my eyes to the importance of those in our profession using their expertise to impact the lives of people around the globe,” Davis says. “We have the capacity to make a huge difference.”
In 2016, Davis returned to the United States and launched her private practice, Nomadista Nutrition, in Los Angeles. She continues to work with the United States Healthful Food Council, Satellite Healthcare and several nonprofit groups.
“I believe every single one of us has a role to play in making a positive influence on the world,” Davis says. “It’s up to each of us to discover what that role is and to take action.”

Understanding the Basics of Medicare

If you are turning age 65 soon, are eligible for Medicare and are not covered by an employer plan, you’ve got some homework to do. Understanding basic Medicare coverage and the terminology of Parts A, B, C, D and Medigap is the best place to start. Everything new comes with potential challenges, but by laying the foundation with solid information, you will have what it takes to select the right Medicare coverage to protect your health and your wallet.

Sidestep These Potential Medicare Mistakes With Knowledge

  1. Many new Medicare enrollees are surprised to find out that vision care, dental care, glasses and hearing aids may not be covered by Medicare. (Medicare Part C may cover some of these services.)
  2. Also, many folks mistakenly think long-term care expenses are covered by Medicare. Long term care services are not covered by Medicare.
  3. If you miss deadlines for signing up, there may be ongoing penalties. And if you miss the sign-up deadline for Medigap, your coverage may not be guaranteed.
Knowing the details of what’s not covered by Medicare, can be almost as important as knowing what is covered. It’s not impossible to figure Medicare out. There are terms to understand, mistakes to watch out for, actions to take and deadlines to meet. (For related reading, see: How Does Medicare Work After Retirement?)

The Parts of Medicare

Part A is Medicare hospitalization coverage. For many retirees, Medicare hospital and skilled nursing care coverage does not require an annual premium. This part of Medicare covers inpatient hospital costs. Medicare does not cover 100% of all expenses. That’s why Medigap insurance is so important.
Part B pays for doctors' bills. You will pay a monthly/quarterly premium for this coverage. Please note, not all doctor’s bills are covered. There are annual deductibles and assignments. Medigap insurance can also help with these expenses.
Part C is Medicare Advantage which is HMO-like coverage that covers Part A, Part B and sometimes Part D. It may also cover routine vision and dental care. (For related reading, see: How to Choose the Best Medicare Advantage Plan.)
Part D is the Medicare drug plan. Approved Medicare Part D prescription drug plans are only going to pay a portion of the costs for your prescription drugs. Your choices of prescription drug plans and costs can vary by state and zip code. Beware of the donut hole, aka the coverage gap!
The Medicare.gov website is a great place to search for prescription drug plans available in your area and ‘cost out’ your annual prescription drug costs. (Tip: You can enter your zip code to begin and save your plan ID and date so you don’t have to re-type your prescription list every time.)

Medigap Insurance

Medigap insurance policies are standardized across the United States and are designed to help pay for expenses Medicare does not cover.
The Medicare.gov website has a page with insurance companies that provide Medigap policies in your area. After entering your prescription drug information, the site allows you to compare the key features of available Medigap policies side-by-side.

Medicare Resources

There is a lot to know about Medicare. Start learning early about what’s covered and not covered by Medicare. Take the time to understand Parts A, B, C, D and Medigap insurance. If you don’t think you can afford to pay for coverage, explore assistance options.
Consult these websites, videos and booklets for more information.
